Why hire a producer to record your demo or album?

The simple answer is - It costs less.

Record producers get a discounted rate at certain studios because of the clientele they bring to the studios. This can save a few bucks but isn't the most important element to be considered when hiring a record producer. The knowledge that an experienced producer provides can save a significant amount of the initial recording budget.
